how to make Kashk Bademjan

Kashk Bademjan is one of the simple and delicious Iranian dishes. This dish combines eggplant, liquid curd, onion, and garlic.

Ingredients for four people

  • Medium eggplant 4
  • large Onion 1
  • cloves Garlic 4
  • Liquid curd 1 cup
  • Dried Mint 2 tbsp
  • Black Pepper ½ tsp
  • Salt 1 tsp
  • Turmeric 1 tsp
  • Vegetable oil 4 tbsp

Kashk Bademjan Instructions

Step 1
Peel the eggplants, then slice them one centimeter in diameter. Put a pan on the heat and add two tablespoons of vegetable oil.

Step 2
Once the oil is hot, place the eggplants in a pan and let one side fry for 3 to 5 minutes over low heat.

Step 3
After frying one side of the eggplants, turn them over and fry the other side, then take them out of the pan and set them aside.

Step 4
Peel the onion, finely chop it, and add two tablespoons of oil and onion to the pan, then Saute for 3 to 5 minutes until the onion is soft.

Step 5
Peel cloves of garlic, and chop them finely. Then add it to the pan. Fry the garlic with the onion for one minute, then add the fried eggplants with salt, black pepper, and turmeric to the pan.

Step 6
Add 1 cup of water, cover the pan, and let the eggplants cook for 25 to 30 minutes. After 30 minutes, remove the ingredients from the pan, pour them into a blender, and mix.

Step 7
Take the ingredients from the blender, then pour them into the pan. Then add the curd with the dried mint to the pan and mix the ingredients.

Step 8
Let the food stay on the heat for another 10 minutes until it is ready to serve. You can garnish the Kashk Bademjan with walnut kernels and fried onions.
